It’s either a quiche without cheese or an extremely deep omelette. Either way, it was pretty tasty and I’m proud of it, and all with zero salt, pepper or butter. I boiled some potatoes until half cooked, then sliced and used them to line a shallow oven-proof dish. Without oil or butter, I used foil to prevent sticking. I very lightly boiled broccoli and courgettes, and then placed these in the dish along with some chopped mushrooms. I then beat 11 eggs (large dish) and poured it in. I topped with sliced tomatoes and baked the whole lot on a low heat for half an hour.
It’s served here with a fresh salad of tomatoes, lettuce, sliced carrots and peppers. There’s also boiled rice, home-made houmous (minus the olive oil, salt and garlic) and a home-made flat bread.
